The difference between the two may be minimal. Ground chuck contains about 15 to 20 percent fat, meaning it’s 80 to 85 percent lean. In other words, a ground chuck cut is often equivalent to lean ground beef.
Remember, the 80% ground beef contains only 20% fat while the ground chuck also contains almost 80 to 85% lean fatless meat.
According to the USDA Food Safety and Inspection Service (USDA FSIS), this should not contain fat content of more than 30% otherwise it can cause a lot of health problems. In this case, we will call it unbranded meat because it does not fulfill modern standards. The right percentage of the fats and meat content is necessary. It is important to note that the meat content of the beef also loses its tenderness when it does not contain the right proportion of fats.
On the other hand, you can notice that they contain a bit less quantity and the whole taste comes out to be very tasty. It almost seems a fatless option because it often contains only 10% to 15% fat content while the composition is quite flexible and it may contain 30% fat content.
